Jamaican jerk goes way back to the original inhabitants of Jamaica – the Taino Indians; and later the Maroons. The word “jerk” refers to the method of grilling the wild game they caught (seasoned or marinated with local herbs and spices) over a slow fire of pimento wood thus giving the smoky taste of the traditional jerk pit.
This method of cooking has been passed on to the current generation, but today we can trade the pimento wood fire for the barbeque grill or oven while creating the same taste. The unique blend of herbs and seasonings is what gives that authentic Jamaican jerk flavor.
