    • 3 lbs goat meat

    • 1 tbsp chopped garlic
    • 3 stalks scallion (chopped)
    • 1 tsp chicken seasoning 
    • 2 medium onions (finely chopped)
    • 1 tbsp chopped ginger
    • 2 tsp Tropical Spice All-purpose Seasoning
    • 1 tsp Tropical Spices Season to Di Bone
    • 2 tbsp Tropical Spices Curry Powder
    • 1½ scotch bonnet pepper (chopped, optional for spice level)
    • 1 large sweet pepper (cubed)
    • 2 tbsp soy sauce
    • ½ lb Irish potato (peeled and diced)
    • 1 medium carrot (cubed)
    • 1 tbsp olive oil

Instructions

Step 1: Prepare the Goat Meat

  1. Trim excess fat from the goat meat.
  2. Wash properly with vinegar and water, then set aside.

Step 2: Season and Marinate

  1. Add half the chopped seasonings, thyme, pimento, curry powder, and all the powder seasonings to the goat meat.
  2. Mix thoroughly to coat the meat evenly.
